I love that this meal only has 6 ingredients. LOVE it. Sometimes I enjoy getting a real complex gourmet recipe and creating it in my kitchen. The downside to this, though, is getting COMPLETELY overwhelmed by the sheer amount of THINGS that I need to make sure I have. With the recipe I am about to share, I ALWAYS have the ingredients on hand.
So, in a pinch when faced with the question, "What am I going to MAKE for DINNER tonight?!? AUGH!!" I can always answer with, "Ah, yes, Chicken Diablo!"
Chicken Diablo
Ingredients
- 4 Chicken Breasts
- 4 TBS Butter
- 1/2 cup Honey
- 1/4 cup Mustard
- 1 tsp Salt
- 1 tsp Curry Powder
Cooking Directions
- Preheat oven to 375 degrees. Melt butter on the stove over low heat. Once melted, stir in honey, mustard, salt and curry. Place chicken in suitable oven casserole dish (spray with cooking spray). Pour butter mixture over chicken. Bake for 45 minutes.
Many of you probably have a similar recipe - but I love the addition of curry. The butter seems to seal in the juices, so the chicken is so moist and very flavorful. And, as always, it's SIMPLE and comes together in a SNAP!
I have no idea how I started this tradition, but I tend to serve this dish up with Spanish Rice. I just get the Lipton's "Fiesta Sides" and follow the instructions. For whatever reason, the tastes go well together. Who knew?
